Ingredients
- 1 lb of black beans or 4 cans of black beans
- 10 cups of water
- 2 green peppers halved and seeded
- 2/3 cup of olive oil
- 1 large chopped onion
- 4 garlic cloves chopped
- 4 teaspoons of salt
- 1/2 teaspoons of pepper
- 1/4 teaspoon of oregano
- 1 bay leave
- 2 tablespoons of sugar
- 1/2 cup of Spanish Cooking wine (ie: La Vina, Banda del Oro)
- 2 tablespoons of vinegar
- 2 tablespoons of olive oil

Step 1
Place 2-3 can of the beans in a pot and wash well (drained). In the same pot add 10 cups of water and green pepper and soak beans until they double in size or swell up.. Then cook the beans until soft and tender. If using can beans start cooking on med-low heat.
Take 2 cans of the beans and puree them. (Do not drain first)
In saucepan, saute onion, green pepper, garlic and 1 cup of beans that have been puree. Cook for 5 to 10 minutes then pour them into the pot with the rest of the beans.
Add salt, pepper, sugar, oregano and bay leaves. Bring to a boil and then turn the head down to simmer for 1 Hour.
After simmering beans for 1 Hour add the vingear and the wine and continue to cook for another Hour. Before serving add the Olive Oil (this is optional)
