- 4-6 salmon fillets (no skin)
- 3 tbsp. olive oil
- ground pepper
- 3/4 c. prepared pesto sauce
- 1/2 c. parmesan, shredded
- 3 plum tomatoes, sliced (optional)
Preheat oven to 350F.
1. Lightly coat baking pan with nonstick spray. Place salmon in pan & drizzle with oil. Season with pepper to taste & spread pesto over each fillet. Sprinkle with parmesan. Optional: place tomatoes over parmesan & sprinkle with more parmesan.
2. Bake for about 20 minutes or until fish flakes easily with a fork.
