Chili

Ingredients

  • Brown meat on medium heat in 4 quart pot, 15 minutes, then add:
  • 6 pounds beef, ½ inch cubes with all fat removed
  • 6 cups beef broth
  • 6 cups chicken broth
  • 6 medium onions, diced
  • 9 tablespoons Red chili pepper, pure ground chili pepper
  • 2 teaspoon cayenne pepper
  • 2 tablespoon salt
  • 3 - 15 ounce cans of tomato sauce or diced tomatoes
  • Boil rapidly for 45 minutes, or until the meat is almost tender, with id on the pot.
  • Then add:
  • 9 Tablespoons chili powder
  • 4 1/2 4 ½ tablespoon cumin
  • 6 teaspoons minced garlic
  • 3 teaspoons pepper

Preparation

Step 1

Reduce heat to a very slow simmer for 30 minutes. Serve with grated cheese, chopped onions and jalapenos.
