Lamb Chops with Mustard-herb Crust

Ingredients
- 8 lamb chops (3-4 oz.)
- 1/4 c. Dijon mustard
- 1 tbsp. garlic, minced
- 1/2 c. dried breadcrumbs
- 1 tbsp. parmesan, finely grated
- 1 tbsp. fresh rosemary, minced
- 1 tsp. dried Italian herbs
- 2 tsp. coarse salt
- 1 tsp. ground pepper
- 2 tbsp. vegetable oil

Step 1
1. In a small bowl, combine mustard & garlic. In a wide shallow bowl, combine breadcrumbs, parmesan, rosemary & dried herbs with a whisk. Pat chops dry with a paper towel and season with salt & pepper. with a basting brush, lightly coat chops with mustard mixture, then dredge in breadcrumb mixture.
2. In a large nonstick sauce pan, heat oil over medium-high. Add half the chops to pan & cook until browned, 2-3 minutes per side. Repeat with remaining chops & oil. Let chops rest 5 minutes before serving.
