Ingredients

  • 1 bunch green onions, coarsely chopped
  • 3 oz ginger root, peeled
  • 1 oz garlic cloves, peeled
  • 4 cups soy sauce
  • 1/4 cup + 2 TBS sherry
  • 2 TBS olive oil
  • 1/2 TBS toasted sesame seed oil
  • 1/4 lb brown sugar, by weight
  • 1/4 lb granulated white sugar, by weight

Preparation

Step 1

1) Place green onions, ginger and garlic cloves in a food processor or blender and coarsely chop. You want large chunks.

2) In a large saucepan, combine green onion mixture and all other ingredients. Bring to a full boil over med-high heat. Remove from heat and cool completely. Refrigerate overnight.

3) Strain marinade into a new container removing only the bulk of the onions. Some garlic and ginger should be left in the marinade.
