Ingredients

  • 2 eggs
  • 2 Tablespoons Coconut Oil - melted
  • 2 Tablespoons Coconut Flour - sifted
  • 3 Tablespoons Coconut Milk
  • 2 Tablespoons Water
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • pinch cinnamon
  • pinch nutmeg
  • 1 Cup raspberries (filling)
  • 1 Tablespoon honey (topping)

Preparation

Step 1

Beat the eggs and the rest of the ingredients together. Melt the coconut oil in a pan, and also beat it in with the mixture.

Pour 1/3 Cup of the batter into the hot pan and tilt the pan around so you get about a 6" diameter crepe. Flip it so it cooks on both sides.

Stuff your berries inside and wrap it up!

I sprinkled some coconut flakes over it as a garnish.

We had a couple of eggs on the side for additional protein.
