Ingredients

  • 4 chicken thighs
  • 1 cup hot salsa
  • 1-2 teaspoon Saracha (optional)
  • 1/4 cup light peanut butter
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • 1 cup dry instant couscous
  • 1 cup chicken broth
  • 2 diced green onions
  • 1 teaspoon light butter
  • 1 teaspoon salt
  • 1-2 tablespoons chopped garlic

Preparation

Step 1

Place chicken in slow cooker

Mix together all ingredients and pour over chicken and cook on high for 3 hours, then low for 2-3 hours

Add, chicken broth, salt and butter into a small pot and bring to a boil

Add dried couscous, green onions, garlic stir together cover and remove from heat

Pour chicken and sauce over cooked couscous
