  • 2 pinches Salt To Taste
  • 1 pinch Pepper To Taste
  • 1 loaf Ciabatta Or French Bread
  • 1-1/2 cup Grated Parmesan Cheese (up To 2 Cups)

Here is my take on classic St. Louis toasted ravioli. I’ve added a grilled twist that really works well in the filling. I don’t know why these pillows of fried pasta goodness are called “toasted” but I do know that they are very good.

I found this copycat recipe online—it really does taste remarkably similar to Wendy’s Chili, only it’s a bit heartier than what I usually get when I hit my local drive-thru. Be warned, this recipe makes a ton—it’ll fill a 5 1/2-quart Dutch oven almost to the rim. Add cheese or sour cream if you like, but they’re really not needed here.

1. Combine all the ingredients except the bread and cheese in a food processor, and process until smooth. Season with salt and pepper.

3. Remove the bread, separate the halves and load them up with Parmesan cheese. Return them to the oven and either crank up the heat to 500ºF or put them under the broiler.
