Chili Con Queso

Ingredients

  • 1 medium size onion, (1/2 cup) finely chopped
  • 3 Tbsp. butter
  • 3 Tbsp flour
  • 1 tsp. salt
  • 1 cup heavy cream
  • 1 can (1 lb.) whole tomatoes, drained and chopped coarsely
  • 1 can (4 oz.) chilies, chopped
  • 1 pkg. (8 oz.) Monterrey Jack cheese, cubed

Preparation

Step 1

Saute onions in butter in medium saucepan until tender. Stir in flour and salt, stir constantly until bubbly. Remove fromheat. Stir in heavy cream slowly. Return to heat and cook; stir until sauce thickens and begins to bubble (approx. 3 minutes). Stir in tomatoes and chilies; cook 1 minute. Add cheese, stir until melted. Serve warm.
