Tomatillo-Poblano Guacamole

Ingredients

  • 1 lge. poblano chile
  • 4 med. tomatillos
  • 1 sm. onion, minced
  • 1 minced clove garlic
  • 1/4 C chopped cilantro + 1 T for garnish
  • 1 T lime juice
  • 3 avocados, diced
  • Salt & pepper
  • Baked tortilla chips

Step 1

Preheat broiler. Put poblano on baking sheet & broil til charred all over, @ 4 min. Transfer to small bowl, cover litely with plastic wrap & let stand 5 min. Rub skin off with paper towel & discard stem & seeds. Cut into 1'4" dice. Transfer all but 1 T to med. bowl.
In metal baking pan, broil tomatillos, turning once, til lightly browned, @ 3 min. Transfer tomatillos to food processor & puree.
Add tomitillo puree to diced poblano along with onion, garlic, chopped cilantro, lime juice & half of avocado; mash well with a fork. Add remaining avocado & mash lightly. Season with salt & pepper. Transfer to serving bowl & top with reserved 1T cilantro & diced poblano. Serve right away with baked tortilla chips.
