Pignoli Cookies

Ingredients

  • 1/2 cup granular sugar
  • 1/2 cup confectioner's sugar
  • 1/4 cup un-sifted flour
  • 1 can (8oz.) almond paste
  • 2 egg whites
  • 1/8 tsp. salt
  • 4 oz. pignoli nuts

Preparation

Step 1

Preheat oven to 300 degrees

Sift sugars, flour and salt- whisk together in large mixing bowl.

In another bowl, mix together the almond paste and egg whites.

Mix with dry ingredients until thoroughly combined.

Grease cookie sheets.

Mold dough into 1 inch balls, press top side into bowl of pignoli nuts so nuts will fform onto one side only. Only want about 8-10 nuts on each cookie.
Place onto cookie sheets and bake. Bake for about 15 minutes or until golden brown.
