Ingredients

  • 1/2 lemon - grated and juiced
  • 2 T toasted pine nuts
  • 2 T mint leaves - thinly sliced
  • 1 1/2 # baby green or yellow patty pan squash
  • 1 T olive oil
  • 1/4 tsp kosher salt
  • 1/8 tsp black pepper

Preparation

Step 1

Combine lemon juice and rind, pine nuts, mint leaves into small bowl

Cut squash into halves; add oil, salt & pepper and toss to coat

Place squash on grill rack and grill until tender - about 4 min.

Divide onto plates and sprinkle evenly with topping
