Ingredients
- 1/4 c. butter
- 2 tbsp olive oil
- 1/3 c. finely chopped onion ( 1 small)
- 6 cloves of garlic, minced
- 1 1/2 lbs. fresh peeled & devined med shrimp
- 1/4 to 1/2 crushed red pepper
- 1-12 oz jar of roasted sweet red peppers, drained & chopped
- 1/2 c dry white wine
- 1/2 c whipping cream
- 1/4 c snipped fresh basil
- 1 c finely shredded Parmesean cheese (4 oz)
- 12-16 oz dried pasta, cooked & drained

Step 1
In a lg skillet, heat butter & oil over med-high heat until butter is melted. Add onion & garlic. Cook & stir for 1-2 min or until onion is tender. Add shrimp and red pepper; cook & stir for 2 min. Add roasted pepper & wine.
Bring to boiling; reduce heat. Simmer uncovered, about 2 minutes or until shrimp are opaque, stirring occasionally. Stir in cream. Return to boiling; reduce heat. Boil gently, uncovered for 1 min. Stir in basil. Add shrimp mixture and cheese to hot cooked pasta; toss gently to combine.
