Ingredients

  • 1 tablespoon peanut or canola oil
  • 1 lb ground pork, turkey or chicken
  • 1 small red bell pepper, diced
  • 2 cups shredded cabbage and carrot slaw mix (or 1 cup shredded cabbage, 1 cup shredded carrot)
  • 1 cup chopped fresh cilantro, divided
  • 6 green onions sliced thinly
  • 1 tablespoon minced fresh ginger
  • 1 garlic clove minced (or more to taste)
  • 1 tablespoon soy sauce
  • 1 tablespoon Asian fish sauce
  • 1 tablespoon sweet chile sauce
  • 1/2 tsp hot chili paste (optional)
  • 1 teaspoon sesame oil
  • Approx 16 Boston or bibb lettuce leaves, washed and patted dry

Step 1


1)In a large heavy skillet, heat peanut oil until hot. Add pork and cook over medium heat until browned and cooked through, about 5 – 7 minutes. Transfer pork to a plate.
2)In the same skillet, add the bell pepper, cabbage, carrot, ¾ cup cilantro, green onion, ginger, garlic, soy sauce, fish sauce chile sauce sweet and hot and sesame oil. Cook over medium heat, stirring constantly, about 10 – 15 minutes or until cabbage and carrot start to wilt. Add browned pork and heat to serving temperature. Transfer mixture to serving plate and garnish with remaining cilantro.
3)Arrange the lettuce leaves on a serving platter. To eat, spoon the pork mixture on a lettuce leaf and roll up like a burrito. Serve immediately.
