Dressing: Basic Vinaigrette

Ingredients

  • 1/4 cup white wine vinegar
  • 1 tablespoon Dijon style mustard
  • Pinch sugar
  • Coarse salt
  • Ground pepper
  • 3/4 cup extra-virgin olive oil

Preparation

Step 1

1. In a small bowl, whisk together vinegar, mustard, and sugar; season with salt and pepper. Slowly add oil, whisking to combine, or shake all ingredients in a jar.

2. Add-in finely chopped shallots or fresh herbs, including parsley, basil, or cilantro.

3. Use on mixed greens, steamed or boiled vegetables, such as green beans, asparagus, broccoli, or potatoes.
