Ingredients
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1-1/2 cups lightly salted butter or margarine, at room temperature
- 1-1/4 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla
- 3/4 cup finely chopped pecans

Mix flour, baking powder, and salt. In large mixer bowl beat butter and 1 cup sugar at high speed. When fluffy, beat in eggs one at a time and then add vanilla. At low speed add flour mixture one-fourth at a time. Wrap dough in clear plastic wrap and refrigerate 1-2 hours.
Heat oven to 375 degrees. Shape dough into balls, using 1 teaspoonful of dough for each, roll in chopped nuts and place 2" apart on an ungreased baking sheet. Put remaining 1/4 cup sugar in a small dish. Dip a flat-bottomed glass in water and then in sugar and press 1-2 cookies flat. Repeat until all cookies are flattened. Bake 6-8 minutes until light brown around the edges. Remove from oven, cool on baking sheet 5 minutes before removing to a wire rack, cool completely. Makes about 9 dozen cookies.
