Green Beans with Warm Bacon Dressing

Ingredients

  • 2 lb fresh green beans, trimmed
  • 4 slices bacon
  • 3 large shallots, thinly sliced
  • 2 Tbsp cider vinegar
  • 1/4 tsp salt and pepper

Preparation

Step 1

In large pot, bring green beans and enough water to cover to a boil. Cook 6 minutes or until crisp-tender; drain.

Cook bacon in large skillet over medium heat until crisp; drain on paper towel. Remove all but 2 Tbsp bacon fat from skillet. Add shallots and sauté 1 to 2 minutes until slightly golden.

Remove from heat; stir in vinegar. Add green beans, salt and pepper; toss to coat. Crumble bacon on top.
