- 1 t vanilla
- 1/3 c sugar
- 1/3 c cocoa
- 1/2 c flour
- 1/2 t baking powder
- 1/4 t baking soda
- 1/8 t salt
- 1/3 c water

Line a 15 1/2 x 10 1/2 x 1 jelly roll pan with foil. Grease foil.
Beat whites til foamy. Gradually add 1/2 c sugar, beating til stiff peaks form. Set aside.
Beat yolks together with vanilla on high, about 3 minutes. Gradually add 1/3 c sugar, beat 2 minutes.
Combine dry ingredients and add to yolk mixture alternately with water.
Fold in chocolate and whites.
Spread into the foil lined pan and bake 12-15 minutes.
Immediately invert onto towel sprinkled with powdered sugar. Peel foil off carefully. Roll cake in towel starting at a narrow end.
Prepare filling:Beat 1 c whipping cream til slightly thick. Add 1/4 c confec. sugar and crushed peppermint candy. Beat til stiff.
Unroll cake and spread with filling. Re-roll cake. Place on a serving dish.
Melt 2 T butter in saucepan. Add 2 T cocoa and 2 T water. Stir til thickened. Cool slightly.Blend in 1 c confec. sugar and 1/2 t vanilla. Pour over top. Chill.
