Ingredients

  • 6 ears of fresh corn
  • S&P
  • 4 Slices Bacon, chopped
  • 1 onion, chopped
  • 4 cups low-fat milk
  • 1 tb cornstarch
  • 1/4 cup sliced scallions

Step 1

Scrape kernels off corn. Put cobs in 1 cup water, sprinkle of S&P in 4qt pot with lid over med-high. Boil, turn low for 20 min.
Brown Bacon, 4-6 min. Add onion for another 5 min.
Remove cobs from stock and discard. Add milk corn, bacon & onion to stock and boil.
Lower heat, stir frequently, cook 10 min.
Whisk cornstarch with 2 tb water until smooth
Add to soup, stir until thickens, 1 min.
Serve with scallions.
