Ingredients

  • Cupcakes:
  • 4 Eggs
  • 2 Cups Sugar
  • 1 Cup Vegetable Oil
  • 1 Cup Buttermilk
  • 2 tsp. Vanilla Extract
  • 2-1/2 Cups Flour
  • 2-1/4 tsp. Baking Powder
  • 1/2 esp./ salt
  • Frosting:
  • 1/2 Cup Unsalted Butter, softened
  • 4 Cups Powdered Sugar
  • 1/2 tsp. Salt
  • 1/4 Cup Milk
  • 1 tsp. Vanilla Extract
  • food coloring & sprinkles optional

Preparation

Step 1

Preheat oven to 350.

Cupcakes:

In a large mixing bowl, whisk the eggs and sugar with an electric mixer or a whisk until light and fluffy. Gradually whisk in the oil, buttermilk and extract. Combine well.

In a medium bowl, whisk together the flour, baking powder, and salt, then add dry mixture to the egg mixture slowly and combine well.

Transfer to muffin pans that have been lined with paper muffin cups (or a rectangular baking pan, a 10" round pan, or 2 8-9" baking pans that have been lined with buttered parchment paper and floured). Bake 15-20 minutes or until springy in the center. Baking time will cary with size of the pan. Cool completely before frosting.

Frosting:

Beat the butter with an electric mixer until fluffy. Add powdered sugar, one cup at a time, and mix on low until incorporated. Begin adding small amounts of milk and Vanilla, continue to add milk until the frosting reaches a spreadable consistency. Add food coloring a few drops at a time to create color if desired. Spread about 1/4 cup frosting on each cupcake and top with sprinkles if desired.
