Ingredients
- 1 cup sugar
- 1/2 ½ cup brown sugar
- 1 C. raisins
- 1 cup canned pumpkin
- 1/2 cup oil
- 1/4 ¼ C. water
- 2 eggs
- 2 cups flour
- 1/2 ½ C. nuts
- 1 tsp. Soda
- 1/4 ¼ tsp. Ginger
- 1/2 ½ tsp. each salt, nutmeg and cinnamon
Preparation
Step 1
Combine sugars, pumpkin, oil and eggs; beat until well blended. Sift together flour, soda, salt and spices; add and mix well. Stir in raisins, nuts and water. Spoon into well oiled 9x5x3 loaf pan. Bake at 350 degrees for 65-75 minutes or until done. Turn onto rack to cool. Enjoy!
