Tips: Keep lettuce fresh

Use this clever technique to keep your greens fresh and salad ready for several weeks.

Step 1
First, wash the greens in several changes of cold water. Tear them into bite sized pieces and let them soak in cold water for 30 minutes. Then dry them thoroughly in a salad spinner and blot off any excess water with paper towels. Place the leaves, with one or two sheets of paper towel, in a large zip-close plastic bag. Squeeze out as much air as possible and refrigerate.
Add these toppings:
Add chunked pared apples; chopped, toasted walnuts; and a sprinkling of crumbled blue cheese.
Mustard vinaigrette.
Sliced strawberries, a mandarin orange, thickly sliced sweet onion
Whisk a little canola oil and orange juice with some minced onion and a pinch of dried thyme
