Sopaipillas Pastry Puffs

These sopaipillas are crisp feathery light. Dressed up with cinnamon-sugar or drizzled with honey or filled with fruit.
Ingredients
- 2 cups all-purpose flour
- 1/4 cup shortening
- 1 tbs double-acting baking powder
- 1 tsp salt
- 2/3 cup milk
- Salad oil
- 1 tbs confectioners' sugar
- 1/2 tsp ground cinnamon

Preparation
Step 1
About 45 minutes before serving or early in day:
1. In large bowl with fork or pastry blender, mix flour, shortening, baking powder, and salt to resemble coarse crumbs. Add milk, stirring until dough holds together; turn dough onto lightly floured surface and knead until smooth, about 3 minutes.
2. On lightly floured surface, with lightly floured rolling pin, roll half of dough into 12" by 9" rectangle(set remaining dough aside). Cut rectangle into twelve 3" by 3" squares. Repeat with remaining dough.
3. In 3-quart saucepan over medium heat, heat 1 1/2" salad oil to 375F using a deep-fat thermomenter. Or heat oil in deep-fat fryer set at 375F. Fry 2 dough squares at a time in hot oil, turning with slotted spoon as soon as they rise to the surface and turning often until both sides are golden brown (dough will puff up). Remove puffs to paper towels to drain.
4. Serve warm or cold. If desired, mix confectioners' sugar and cinnamon in a small bowl. Sprinkle puffs with mixture.
