Ingredients
- 6 medium baking potatoes
- 1/2 LB bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 2-3 oz. enchilada sauce
- salt
- pepper
- Cajun seasoning
Preparation
Step 1
Bake potatoes at 350 degree oven for 1 hour or until potatoes are soft.
Cool, slice in half and scoop out potato.
Sprinkle each potato half with Cajun seasoning, salt and pepper.
Deep fry seasoned potatoes until golden.
Place small amount of enchilada sauce in each potato,
Mix cooked bacon and cheeses together
fill each half with bacon and cheese, drizzle small about on enchilada sauce over cheese mixture. Bake at 350 for apx. 12-15 minutes. Serve with sour cream
