Ingredients
- Crust
- 1/2 cup nuts, chopped
- 1 1/2 cups oatmeal
- 1 cup brown sugar
- 1/4 tsp salt
- 1 1/2 cups flour
- 1 cup oleo
- 1/4 tsp baking soda
- Filling
- 3 cups rhubarb, chopped
- 1 1/2 cups sugar
- 2 Tbsp cornstarch
- 1/4 cup water
- 1 tsp vanilla
Preparation
Step 1
In a large bowl, combine all the ingredients for the Crust together until the mixture is crumbly. Pat 1/2 of the mixture into a 13” x 9” x 2” pan. In a medium pot, combine the rhubarb, sugar, cornstarch, and water. Cook the mixture until it becomes clear. Blend the vanilla into the mixture. Pour the Filling mixture over the Crust. Sprinkle the remaining crumb mix on top of the Filling mixture. Bake at 350 degrees Fahrenheit for 20 minutes.
