Ham or Bacon Cheese Quiche with Potato Crust

Ingredients

  • 30 oz pkg frozen hash browns, thawed, and dried
  • 1/3 cup butter, melted
  • 8 oz ham or cooked bacon
  • 1 cup grated cheddar cheese
  • 1 cup grated mozzarella cheese
  • 6 large eggs
  • 3/4 cup fat free half and half
  • 1/2 tsp salt
  • 1/2 tsp pepper

Preparation

Step 1

Preheat oven to 425 degrees. Lightly grease a 9 inch deep dish pie plate

Firmly press potatoes into bottom and up the sides of prepared pie plate to form crust of quiche. Pour melted butter evenly over crust. Bake 30 minutes or until lightly browned.

Reduce oven to 350 degrees.

Sprinkle ham or bacon and cheeses evenly over potato crust.

In a small bowl, whisk together eggs, half and half, salt and pepper. Pour over bacon or ham and cheeses.

Bake 30 minutes or until puffed and set.
