Ingredients

  • Base
  • 3/4 cup margarine, softened
  • 1/3 cup sugar
  • 1/2 cup Fry's cocoa
  • 1 1/2 tsp. vanilla
  • 2 eggs
  • 3 cups graham wafer crumbs
  • 1 1/2 cups coconut
  • 3/4 cup chopped walnuts (optional)
  • Filling
  • 6 tbsp margarine
  • 3 1/2 oz. pkg. vanilla instant pudding powder
  • 3 cups sifted icing sugar
  • 1/3 cup milk
  • 1 tsp. peppermint flavoring (optional)
  • green food colouring (optional)
  • Topping
  • 3 tbsp. milk
  • 1 cup chocolate chipits

Preparation

Step 1

Place margarine, sugar, cocoa, vanilla and eggs in a large bowl. Stir until mixture is well blended.
Combine graham crumbs, coconut and walnuts and add to chocolate mixture. Mix until all dry ingredients are well coated.
Press firmly and evenly into bottom of 9 x 13 pan.
Cream margarine in medium bowl.
Mix pudding powder and icing sugar together. Add to margarine along with milk and beat until it resembles icing.
Add flavouring and colouring if desired to make peppermint green filling.
Spread filling evenly over base and chill 15 minutes.
Heat milk in top of double boiler, add chocolate chipits.
Stir constantly to make smooth chocolate topping
Spread melted chocolate quickly and evenly over top and refrigerate at least 2 hours before serving.
