Ingredients
- 2 C. unbleached flour, sifted
- 2 large eggs
- 1 1/3 C. sugar
- 4 tsp. baking powder
- 1/2 ½ tsp. salt
- 1 C. canned, mashed pumpkin
- 1/2 ½ tsp. ground cinnamon
- 4 Tbsp. milk
- 1/2 ½ C. vegetable shortening (Crisco)
Preparation
Step 1
Sift together: flour, baking powder, salt and cinnamon.
Cream shortening and sugar with electric mixer until light and fluffy. Mix eggs, milk, and pumpkin together. Add alternately with flour mixture. Line muffin pans with liners. Fill no more than 2/3 full. Bake for 20 minutes at 350.
