Whole Spice Mix

A simple, versatile mix of whole seeds that particularly good w/ potatoes, legumes, & other vegetarian dishes. Use it whole or grind it as needed in a coffee grinder, blender or small food processor.

Ingredients

  • 2 T mustard seeds
  • 2 T coriander seeds
  • 1 T cumin seeds

Preparation

Step 1

1. Place a small heavy skillet over medium heat.
2. Add all the seeds & cook, shaking the pan frequently, until they are very fragrant & just begin to make popping sounds, 2-3 minutes.
3. Immediately transfer to a plate.
4. Use as needed, whole or ground.
5. Or cool, transfer to a zip-close bag & freeze for up to 3 months.
