Cream of Reuben Soup

Ingredients

  • 1 C Beef Broth
  • 1 C Chicken Broth
  • 1/2 ½ C Celery
  • 1/2 ½ C Onion
  • 1/2 ½ C Green pepper
  • 8 oz. Corned Beef
  • 8 oz. Swiss Cheese, grated
  • 1 1/2 1 ½ C Sauerkraut
  • 4 C Milk
  • 1/2 ½ C Butter
  • 1 C Flour

Preparation

Step 1

1. Bring first 5 ingredients to a boil. Simmer for 10 minutes.

2. Melt butter, add flour and cook to make a roux. Add milk. Gradually add Swiss cheese.

3. Add roux mixture to broth. Add corned beef and sauerkraut. Simmer 20 minutes.
