Spiced Pumpkin Bread

This is Jake's favorite and our attempt to clone the one at Starbucks.

Ingredients

  • 2.5 cups sugar
  • 3/4 cup vegetable oil
  • 3 eggs
  • 3/4 large can of pumpkin
  • 3 cups whole wheat flour
  • 1 tsp cloves
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp ginger
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • Note: cut sugar from 3 cups to 2.5 and oil from 1 cup to 3/4 cup.

Preparation

Step 1

1. Preheat oven to 350. Spray two 9*5*3 inch loaf pans. Beat sugar and oil in large bowl to blend. Mix in eggs and pumpkin. Sift flour, cloves, cinnamon, nutmeg, ginger, baking soda, salt, and baking powder into another large bowl. Stir into pumpkin mixture gradually.

2. Divide batter equally between pans. Bake 1hr to 1hr 15min, until tester comes out clean. Turn onto racks and cool completely.
