Barbecued Pork Chops in Skillet (Or Chicken)

Ingredients

  • 4 center cut pork chops, about 3/4 inch thickness
  • 3 teaspoons paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 3 tablespoons extra virgin olive oil, divided
  • 1/2 cup chopped onion
  • 1/2 cup apple juice
  • 1 cup barbecue sauce

Preparation

Step 1

Wash the pork chops and pat dry.

Combine the paprika, cumin, salt,and pepper; rub the pork chops with the mixture.

Heat oil in a large heavy skillet over medium heat. Brown the chops for about 5 minutes on each side. Remove to a plate and remove excess grease from the pan, leaving about 1 tablespoon.

Add the onions to the pan and cook until the onions are lightly browned. Stir in the apple juice and barbecue sauce. Return the chops to the pan and bring to a simmer. Cover and simmer for 20 minutes. Remove the cover and simmer for 5 to 10 minutes longer, or until the pork chops are tender.

Serves 4.
