Ingredients

  • 1

    can chickpeas drained and rinsed

  • 1

    eggplant

  • 2

    cloves garlic

  • 2

    tbsp tahini

  • 2

    tbsp olive oil

  • 2

    tbsp lime juice

  • 2

    tsp chili powder

  • 1

    tsp salt

  • 1

    tsp cumin

Directions

fork poke the eggplant and wrap in 3 layers of tin foil. roast on grill at 400 degrees for 45 minutes or until eggplant is soft. allow to cool slightly, then scoop out inside of eggplant, leaving skin behind. in a blender combine eggplant and remaining ingredients and process until smooth.
