Rini's Italian Chicken

Ingredients

  • 8-10 pieces of chicken, i.e., Thighs, Legs, Breasts with bone. (Breasts should be split in half)
  • 1 large Spanish Onion - sliced
  • 1 large Red Pepper - cut up
  • 6 garlic cloves - diced or frozen garlic cubes*
  • 8 button mushrooms, sliced - not to thin
  • 2 tablespoons of Italian Seasoning or Oregano
  • 1/2 of a Lemon
  • 1/4 cup Extra Virgin Olive Oil
  • Kosher salt & pepper
  • Approx. 1/4 or so of dry white wine right from the bottle

Preparation

Step 1

1. Preheat oven to 400 degrees.

2. Using a large baking pan, cover with heavy duty aluminum foil (for easy clean up, of course).

3. Arrange all the chicken in the pan. Squeeze the lemon juice all over the chicken. Drizzle the olive oil over each piece of chicken.

4. Add the garlic*, onion, pepper and mushrooms. Let them fall as they may. Season with the Italian seasoning or oregano, S&P.

5. Bake for 1 hour - 1 hour and 15 minutes. 10 minutes prior to removing from oven, with thumb over the bottle of wine opening, add the wine to the bottom of the pan, not on the chicken, so that it incorporates with the pan juices.

6. Serve with Crusty Italian Bread and tossed salad.

*You can purchase frozen Garlic cubes in the Freezer section of your Grocery store. Brand name is Dorot. It can be found in Trader Joes. About 20 cubes per pack. They are EXCELLENT!!!
