Ingredients
- 1/2 ½ C. butter, softened
- 1 C. sugar
- 2 eggs
- 1 to 2 tsp. grated lemon peel
- 1 1/2 1 ½ C. flour
- 1 tsp. baking powder
- 1/2 ½ tsp. salt
- 1/3 C. milk
- 2 T. poppy seeds
Preparation
Step 1
Beat butter and sugar. Beat in remaining ingredients in order listed (left to right columns). Pour mix in 9x5 loaf pan. Bake at 350 for 55 minutes or until toothpick comes out clean. Let cool 15 minutes then transfer to rack. Meanwhile mix glaze: Juice of 1 lemon and ½ C. powdered sugar
Prick loaf with fork and pour glaze over top-place plate under rack to catch drips.
Mini muffins take 10-12 minutes, regular muffins 12-15 minutes.
