Zatarains Paella

Ingredients

  • 2 tbsp olive oil
  • 1 cup diced onion
  • 1/2 diced green bell pepper
  • 1/2 diced red bell pepper
  • 1 tbsp minced garlic
  • 1/2 pd boneless-skinless chicken breasts (cut into 1in cubes)
  • 4 ounces smoked sausage
  • 2 1/2 cups water
  • 1 cup diced tomatoes
  • 1 package zatarains jambalaya mix
  • 1 cup frozen peas

Preparation

Step 1

heat oil in large skillet, add onion, bell peppers, & garlic, cook & stir 5 minutes or until softened
add chicken & sausage, cook & stir 5 minutes, add water, bring to boil

stir in tomatoes & jambalaya mix, return to boil, reduce heat to low, cover & simmer for 15 minutes

put peas in & cook 5 minutes, remove from heat, serve
