Potato Fritata

Ingredients

  • 1 large onion, chopped
  • 2 tbs. olive oil
  • 350 grams tomatoes, peeled and cut into pieces
  • 150 ml. dry white wine
  • Salt and pepper
  • 450 grams potatoes in their skin

Preparation

Step 1

Fry the onion in olive oil on a very low flame until very soft but hardly coloured, stirring often. Add the tomatoes and wine, season with salt and pepper and simmer for half and hour or until reduced to a thick sauce.

Boil the potatoes until soft, then peel and mash them and add gradually to the tomato sauce, letting each spoonful become absorbed, until you have a firm, slightly moist texture. Serve hot or cold, shaped into a cake.
