Green Beans with Shallot Butter

  • 3 Tablespoons butter
  • 2 Tablespoons minced shallots
  • 2 Teaspoons grated lemon peel
  • 1 1/4 1 ¼ pounds green beans (4 cups)
  • 1 Tablespoon lemon juice
  • 1/4 ¼ Teaspoon Salt
  • 1/4 ¼ Teaspoon Pepper



Step 1

Melt butter in small saucepan over medium heat. Cook Shallots 30 to 60 seconds or until fragrant. Stir in lemon peel.

Cook beans in a large pot of boiling salted water 1 to 2 minutes or until bright green. Quickly place in ice water to stop cooking. Drain.

When ready to serve, cook beans in large pot of boiling water 1 to 3 minutes or until crisp-tender. Toss with melted shallot butter, lemon juice, salt and pepper.
