Ingredients

  • 2 pounds of sweet Italian sausage -sliced, or half sweet and half hot.
  • 2 tbs butter
  • 2 tbs flour
  • 4 cups beef broth
  • 1 (28 oz) can peeled plum tomatoes
  • 1 tsp chopped basil
  • 1 tsp oregano
  • 3 small zucchini, thinly sliced
  • 2 cups small pasta(oozo)
  • Salt
  • Pepper
  • Fennel seeds

Preparation

Step 1

1. Cook pasta(oozo) in boiling salted water for 10 minutes.

2. Melt butter to brown sausages over low heat. Drain grease. Sprinkle with flour and stir. Add broth, tomatoes, oregano,and basil. Bring to a boil. Reduce heat and simmer for 30 minutes.

3. Add zucchini and pasta(oozo).Cook for 10 minutes or until ingredients are tender. Add fennel seeds
