Grilled Pork Tenderloin with Soy-Sherry Marinade

Ingredients

  • 2 inch piece fresh ginger, sliced
  • 6 cloves garlic
  • 1/2 c dry sherry
  • 2 tbs soy sauce
  • 1 tbs canola oil
  • 2 tsp cinnamon
  • Pork Tenderloin
  • 4 scallions, thinly sliced
  • salt and pepper to taste

Preparation

Step 1

In food processor, combine ginger and garlic. Pulse until coarsly chopped. Add sherry, soy sauce, oil and cinnamon. Pulse to combine.

In large zip loc, place tenderloin and scallions. Add the marinade, then turn the tenderloin to coat completely. Seal and refrigerate for at leat 1 hour or up to 8 hours.

Heat grill to med hight heat.

Remove tenderloin from bag, leaving as mush of the seasonings on the meat as possible. Season with salt and pepper.

Oil the grill. Grill the pork, turning several times until just cooked until 155 about 15 to 20 minutes.

Transfer to cuttng board, cover with foil and let rest for 5 minutes.
