Individual Beef Wellingtons

  • 4 1 1/2 inch thick filet mignon steaks
  • 1 tbsp evoo
  • 2 tbsp butter
  • 1/2 pound mushrooms, chopped
  • 1 shallot, chopped
  • 1 tsp thyme
  • salt and pepper
  • 1/4 cup dry sherry
  • 8 oz. mousse pate
  • 1 sheet frozen puff pastry 11x17
  • flour
  • 1 egg, with a splash of water


Servings 4


Step 1

Bring steaks to room temp. Heat oven to 425. Heat oil and butter, add mushrooms, then shallots, thyme, salt and pepper for few min. Add sherry, then remove from heat.

Drizzle steaks with evoo and season. heat skilleet, caramelize steaks 2 min per side. Cut pate into 4 pces. Roll out pastry on floured surface, cut in 4. On each, place 1/4 mushrooms, top with pate, then steak. Wrap, trim excess and seal with egg wash. Turn over on lined baking sheet, cut vents, brush with egg wash.

Bake 10-15 until golden. Stand 5 min. then serve.
