Creamy White Beans

Ingredients

  • 1 c dried cannellini beans, soaked overnight in water to cover, then drained
  • 1 medium onion, halved
  • garlic
  • 2 sprigs thyme
  • salt
  • pepper
  • 1/4 c heavy cream
  • 2 T unsalted butter

Preparation

Step 1

Combine beans, onion, garlic and thyme in a saucepan. Add enough water to cover by 2". Bring to a boil over high heat. Reduce heat to medium low and simmer for 20 min. Season with salt and continue cooking until beans are tender, about 15 min. Drain and reserve 1/2 c liquid. Return beans and liquid to saucepan. Add cream and simmer over medium heat for about 5 min until slightly thickened. Stir in butter and season with salt and pepper.
