Ingredients
- 1/3 cup sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 teaspoons lemon zest
- 2/3 cup fresh lemon juice
- 1/3 cup water
- 1 tablespoon butter

Preparation
Step 1
In a medium saucepan, combine sugar, cornstarch,
and salt. Stir in lemon zest, lemon juice, and water:
bring to a boil over medium-high heat. Boil for 1
minute. Remove from heat, and stir in butter. Pour
mixture into a small bowl; cover, and chill for at least
2 hours.
