Lite Strawberry Cream Cheese Cobbler

Isn't it nice to have a lighter option for a popular dessert? This strawberry cobbler is made from scratch, but with Splenda and lite cream cheese.
Ingredients
- 1stick1 stick (1/2 cup) butter
- 11 egg, lightly beaten
- 1cup1 cup buttermilk
- 1cup1 cup all-purpose flour
- 1cup1 cup Splenda
- 2teaspoons2 teaspoons baking powder
- 1/2teaspoon1/2 teaspoon salt
- 2quarts2 quarts whole strawberries, capped and washed
- 4ounces4 ounces lite cream cheese, cut in small pieces

Step 1
Preheat oven to 350°F.
Melt butter and pour into a 9- by 13-inch glass baking dish. Set aside.
In a small bowl, mix together egg, buttermilk, flour, Splenda, baking powder and salt. Pour directly over the butter in the baking dish, but do not stir.
Add the strawberries, arranging in a single layer as much as possible. Sprinkle cream cheese pieces over strawberries.
Baker 45 minutes, or until top is golden brown and edges are bubbling.
