Tomato Sandwiches

Ingredients

  • 16 oz. cream cheese, softened
  • 1 pkg. ranch dip or dressing mix
  • 1/4 to 1/2 cup mayonnaise
  • white bread
  • Roma tomato
  • lemon pepper
  • dried basil

Preparation

Step 1

Mix first three ingredients well and spread on rounds of white bread that have been cut to fit Roma tomato slices. (Usually 2 to 3 per slice of square white bread.)
Freeze.
Shortly before serving time, remove from freezer and top each round with an unpeeled Roma tomato slice. Sprinkle with lemon pepper and dried basil. A Roma tomato will yield about 5 slices. it helps to slice the tomatoes and drain on paper towels for a few minutes before topping bread rounds. It also works to slice tomatoes early in the day and leave refrigerated on paper towels so as to avoid the last minute rush.

Bring ready to assemble. They are hard to transport.
