Corn, Tomato and Pepper Rice

Ingredients

  • 1 (14 oz) can chicken broth
  • 1 cup uncooked white rice
  • 1 (15 oz) can corn, drained
  • 1 (14.5 oz) can diced tomatoes, drained
  • 1/4 cup drained, chopped Jalapeño peppers

Preparation

Step 1

Bring the chicken broth and 1/4 cup of water to a boil. Add the rice. Cover and simmer about 20 minutes. Add the corn, tomatoes and chopped chilies to the rice. Stir well.
