Brined Potatoes

  • Baking Potatoes
  • 2 quarts Water
  • 1 cup kosher salt
  • Olive oil
  • Salt

Preparation

Step 1

Dissolve the kosher salt in the two quarts of water. Then immerse your potatoes in the brine solution for about 4 hours. One they are done soaking, remove them from the brine and dry them gently with paper towels.
Oil the potatoes and then sprinkle with salt
Set up your cooker with a raised grid and pizza stone.
Stabilize your cooker at 400 degrees
Place the potatoes on the pizza stone and close the cooker. Cook for one hour, turning the potatoes once about half way through the cooking, then serve.
