Carrot and Cucumber Salad

Transform this simple, refreshing salad into a main course by adding canned tuna or slices of cooked chicken.

Ingredients
- 2 large cucumbers, peeled halved lengthwise, seeded, and thinly sliced
- 2 carrots, peeled and thinly sliced on an angle
- 1/2 red onion, thinly sliced
- 2 tablespoons cider vinegar
- 1 tablespoon fresh lime juice
- 1 tablespoon sugar
- 1 tablespoon chopped fresh cilantro
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
Preparation
Step 1
Combine all the ingredients in a bowl. Toss well and let stand 10 minutes before serving.
Tip: to seed the cucumber, halve it lengthwise and scrape out the seeds with a small spoon.
