Ingredients

  • Cake:

  • 1/4

    tsp baking soda

  • 3/4

    cup sugar

  • 1/2

    cup all purpose flour

  • 1/8

    tsp salt

  • 1/4

    cup unsweetened cocoa powder

  • 1/3

    cup applesauce

  • 1/4

    cup boiling water

  • 1/4

    cup egg substitute

  • 1

    tsp vanilla extract

  • Frosting:

  • 8

    oz light cream cheese

  • 1

    tbs light butter

  • 2 1/2

    cups sugar substitute (splenda)

  • 1/2

    cup unsweetened cocoa powder

  • Pinch salt

  • 1/8

    tsp vanilla extract

  • 3

    tbs skim milk

Directions

Cake: 1. Preheat oven to 350F 2. In a large bowl, mix baking soda, sugar, flour, and salt. Add cocoa, applesauce, and boiling water to the mixture and stir to combine. 3. Mix in egg substitute and vanilla. Pour into a greased 8 or 9" round baking pan. Bake for 35 minutes. 4. Cool cake completely on a cooling rack before frosting with choccolate frosting. Frosting: 1. In a bowl or an electric mixer, beat the cream cheese and butter together until smooth. 2. In a separate bowl, Mix together the sugar substitute, cocoa, and salt. 3. With the mixer on low speed, slowly add cocoa mixture to cream cheese micxture and mix until combined. Add vanilla and stir to incorporate. 4. If the frosting is too thick to spread, add the milk, one tbs at a time, with the mixer on low, until spreading consistency is achieved.
