Lemon Pudding (Mum)

Ingredients

  • 1 cup sugar
  • 1 1/2 1 ½ Tbsp flour
  • 1 cup milk
  • 1/4 ¼ cup margarine
  • 2 eggs
  • juice & rind of 1 lemon

Preparation

Step 1

Cream margarine & sugar, add grated lemon rind. Beat in egg yolks & flour. Gradually add lemon juice & milk. Fold in beaten egg whites. Set pudding in a pan of hot water & bake until thickened.
